Cacao fruit puree is made from the white pulp under the shell of a cacao fruit pod. This white pulp is situated around the cacao beans, but has no chocolate flavor.

The pulp tastes sweet but also a bit sharp, with some hints of a pear. Even though it does not taste like chocolate, it combines extremely well with all the chocolate applications.

The name cacao tree or Theobroma cacao means ‘food of the Gods’.
This name was given to the food because it brings happiness and energy to those who eat it. The Maya believed that the cacao was discovered by the Gods in the mountains and was given to them after humans where created.
