Banana toffee shake

A sweet and creamy toffee shake with banana flavour.

Assembly

Decorate 200cl glasses toffee with the help of a piping bag. Next, fill the glasses with 150cl of very cold banana shake.

Then immediately, with the aid of a piping bag fitted with a large open-star nozzle, fill the glasses up to the top.

Decorate with crunchy chocolate pearls and chocolate cigarettes.

Preparation

Place all the ingredients in a blender jug and beat.

Fill the bottles.

Preparation

Put the cream, milk, glucose syrup (1) and the seeds from the vanilla bean into a saucepan to heat.

Apart, make a dry caramel mix with the sugar and glucose syrup (2).

Break up and smooth the mix by adding the previous hot syrup base to it.

Remove the mix from heat and allow the temperature to drop to 80 °C before adding the butter.

Mix in a blender and put aside.
