Rosemary Collins

Ingredients

Plymouth Gin

DIRA lemon puree
30ml
Rosemary syrup
20ml
Sparkling water
45ml
Salt
A pinch

Preparation

Combine all the ingredients except for the soda water in a shaker. Add ice cubes and shake until chilled. Double strain the mixture into a pre-chilled Collins glass filled with ice. Top it off with soda water.

 

For decoration, garnish with a sprig of rosemary and a twist of lemon zest.

Rosemary Syrup

Fine sugar

Water
100ml
Rosemary
25gr

Preparation

  1. Combine water and sugar in a medium saucepan.
  2. Bring to a boil, stirring occasionally to dissolve the sugar. While the mixture heats up, prepare a container filled with ice water and another pot filled with a small amount of water.
  3. Blanch the rosemary in boiling water for 15 seconds. Remove the rosemary and immediately place it in the ice water.
  4. Once the rosemary has cooled, remove the leaves from the stem. Discard the stem.
  5. Combine the rosemary leaves and the cooled syrup in a blender. Pulse 5 to 6 times.
  6. Strain the syrup into an airtight container, using a fine mesh strainer and cheesecloth if necessary for a thorough strain
